One-Eyed Willie
A heavily built Canis off-roader in acid green, photographed finished and mid-build. Rockstar named it and explained nothing.

Three images in Rockstar's Ultimate Edition press material carry the name One-Eyed Willie, and all three show the same vehicle: a Canis off-road truck in acid green, with a tube bumper, roof bar, cut arches and oversized knobbly tyres.
The grille badge reads CANIS in the detail shot, which is the only manufacturer identification available.
What the three shots are
The first two are studio shots against a green-lit backdrop, one full vehicle and one close on the grille and bonnet. The third is the interesting one: the same truck up on stands in a workshop, bonnet open, with somebody working underneath it and a warning triangle on the floor.

Why the workshop shot matters
It is the same framing Rockstar uses for Rideout Customs, the body shop shown elsewhere in the same press set. A named vehicle photographed mid-build, in a garage, alongside separate imagery of a customisation business, is a fairly strong hint that this is a build rather than a stock model.
That would make One-Eyed Willie a named custom rather than a manufacturer product, in the way that a real modified truck acquires a name from whoever built it.
Canis
Canis is Rockstar's Jeep analogue, and it has covered the boxy, capable, slightly agricultural end of the range across several games. A Canis in Leonida makes obvious sense given the wetland tracks in Grassrivers and the back country around Ambrosia.
The name
One-Eyed Willie is the pirate whose treasure drives the plot of The Goonies, a 1985 film. Whether Rockstar means the reference or simply likes the name is unknowable, but the studio names things deliberately and the mid-eighties reference points in this game are not accidental.
What is not known
Rockstar has not said what One-Eyed Willie is, whether it is an Ultimate Edition vehicle, a story vehicle, an example of the customisation system, or a base model with a nickname. The name and the manufacturer are all that is confirmed.
