Tattoos, hair and clothing
Electric Fang Tattoo, Sara's Salon, Stock 305 and Goodtime Gear. Rockstar has shown the shops rather than a menu.

Rockstar's press material shows appearance customisation as a set of businesses rather than a character menu, and the businesses have names.
Electric Fang Tattoo
A neon frontage with a snarling animal head sign, shot at night. Inside, the shots show work in progress and results: a full back piece, arm and leg work, and a client waiting with a phone.

Tattoos have been in Grand Theft Auto since San Andreas and have usually been a menu behind a door. Photographing the process, with an artist mid-session, suggests something more staged than a list of decals.
Sara's Salon
Three images: a couple outside the shopfront, a man with a finished cut, and a client in the chair mid-appointment with a stylist working behind her.
That matters for Lucia in particular, since her screenshots have carried most of the game's appearance work so far, with haircuts, piercings and jewellery changing across the official set.
Clothing
Goodtime Gear appears as branded clothing worn in front of a Vice City mural, and the Ultimate Edition includes a set of Vice City Style outfits, shown across five images on both leads. The Vintage Vice City Pack adds a further set of period looks.

Stock 305 and the PTT Store
Two more named businesses appear without explanation. Stock 305 is covered in graffiti and its interior shot shows a wall of spray cans, which makes it a paint or street-art supplier. 305 is Miami's area code, which is a very direct piece of naming.
The PTT Store shot is chaotic enough that we are not going to characterise it: it shows a robbery or a fight in progress inside a shop, with somebody riding a motorcycle through the interior.
Why shops rather than menus
Appearance systems get more use when they occupy space in the world. San Andreas made you drive to a barber. Grand Theft Auto V kept the shops but let a lot of the work happen through menus, and Grand Theft Auto Online eventually collapsed most of it into interfaces.
Naming four separate businesses and photographing their interiors is a signal about which direction this game is going, though it is a signal rather than a statement.
What is not known
Rockstar has not described any of these systems, published options, or confirmed which are available to which character. Whether appearance affects the evidence system, where your clothing is a tracked item the police match against you, is an obvious question that has not been answered.
